Salmon Veggie “Fried Rice”
I know healthy fried rice and cauliflower rice have been trendy for a while, but this meal is SO easy and SO good that’s in been on rotation in our home for a few years, so I think it’s worth the share 😉.
All together it takes approximately 20 minutes from start to finish, and you can enjoy a nice hefty plate (or 2) because it it loaded with veggies and nutrients and low in sugar and carbs.
I do a mix of brown + cauliflower rice (to make it heartier), frozen veggies, liquid aminos (tastes like soy sauce but it’s glute-free) and salmon.
The full recipe is below along with some healthy hacks, because I'm definitely not above frozen foods and easy heat up.
𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀:
1 lb. Salmon
1/ back 𝙛𝙧𝙤𝙯𝙚𝙣 *riced* cauliflower. Stop ricing it yourself- it's not worth the mess.
1/2 bag 𝙛𝙧𝙤𝙯𝙚𝙣 veggies of choice
1 package 𝘮𝘪𝘤𝘳𝘰𝘸𝘢𝘷𝘢𝘣𝘭𝘦 brown rice
𝗛𝗼𝘄 𝘁𝗼:
• Heat a pan with oil and add salmon. Drizzle with olive oil and season with sea salt and garlic.
* Cook for approx. 10 mins give or take, flipping every few minutes
* Separate into bite size pieces as you're cooking
• In a separate pan: saute frozen veggies. After a few minutes add frozen cauliflower rice (cooks quicker). Season with sea salt and garlic.
• As the food is getting close to finished, heat the rice in the microwave (mine is 90 sec). Then add rice to the veggie pan.
• Add salmon to rice and veggie mix and drizzle on liquid aminos (or soy sauce) to taste. Mix all together.
