Veggie + Egg Scramble with Parmesan

I’m ALL about easy and quick meals that do not require much prep and too many ingredients. And this recipe couldn’t be easier or more delicious. This meal is full of protein and fiber and low in carbs, which makes it perfect for balancing your blood sugar, stabilizing your energy and supporting weight management.. Full recipe is below, and it’s perfect for breakfast, lunch or dinner!

Full Recipe:

• Heat oil in pan and saute frozen veggies of choice (I used riced broccoli + corn)

• Once veggies have cooked through, separate the veggies to make a hole in the middle of the pan and drop in 2 eggs.

• Scramble up the eggs and then mix them into the veggies.

• Sprinkle on sea salt and a pinch of pepper.

• Scoop into bowl and top with parmesan cheese.

Take a bite and enjoy… and make sure to make extras for the family or else they’ll be eating yours ;).
