A Simple Way to Eat More Greens

We all know that veggies are a staple in a healthy diet, but it's not always so easy to consume your daily requirements, especially as the week gets busy with work and kids.

One of my hands down favorite ways to sneak in MORE GREENS, that not only doesn't feel like extra work but is also very kid friendly:

ADD A GREEN TO YOUR STARCH!


By adding a veggie to your starch, you’re:

πŸ₯¦ boosting the fiber load in your meal, which is especially important when you're eating starches to help stabilize your blood sugar.

πŸ• saving yourself time and work by adding to what you are already making instead of cooking a completely separate side dish (or not having the veg at all).

πŸ™ƒ you’re able to feel more satisfied from the extra nutrients. You can also eat your heart out knowing it's 50% greens.


2 OF MY FAVORITE COMBOS:

🍚 RICE + πŸ₯¦ Riced Broccoli:
- Cook frozen or fresh riced broccoli on the stove with avocado or olive oil. Sprinkle in salt and garlic powder. At the same time, prepare your rice (microwave for a more instant meal). Add cooked rice to the broccoli, season as desired and mix it all together.

🍝 PASTA + Brussels Sprouts
- Add more water to a pot than you normally would for pasta and bring to a boil. Add pasta and cook as directed on the box (plant-based for bonus points- my favorite is @ancientharvest). At the halfway point add cut up RAW brussels sprouts to the pasta and cook (add an additional 2 minutes to your timer). Once pasta is cooked and the brussles have softened, drain the water from the pot, add olive oil and sprinkle generously with sea salt.

Both variations are delicious and offer a really easy way to add more greens and fiber to your day!
